I'd love to start a team with you... unfortunately, I'm a fat, perfectionist hog. I doubt I could keep up with such a well-disciplined, eloquent fellow such as yourself. :\

Collision isn't that hard. Though the internet itself isn't the best of resources, books work great. I recommend you get "Collision Detection in Interactive 3D Environments", as you can probably notice from the title, it focuses on 3D, but as most things in life, baby steps first. The book explains the 2D concept and how to implant it and then convert it to 3D and explains that to. If you are looking for just the basics of 2D polygon collision I suggest you search for "2D polygon-based collision detection and response" Might find some nice stuff there.

Collision detection isn't always easy. Two rectangles intersecting is one thing, but when you are aligning things to colliding planes in 3D, it can be really tricky to get.

But yeah, get one of the good books dedicated to collision detection like Zappy77 mentioned. Most (if not all) the books not specifically dedicated to the subject tend to give it a very superficial gloss-over, if anything.

Collision detection is mostly math and collision response is basically physics.
Those two areas are so vast that it's very easy to get lost. I don't know if you can just 'figure it out' or find a simple 'this is how it's done' tutorial online.
It's also important what type of game you want to make. If it's something simple you can program the collision detection yourself. For example, for a basic arena shooter you'll probably only need to know if 2 shapes are intersecting. If you want realism then you might want to look into an existing physics library and build your game around that.
