If you are looking for standard rendering (i.e. using Flash-specific drawing style), I've found that the only book I needed was "Foundation ActionScript 3.0 Animation" by Keith Peters. While not specifically a "learn ActionScript" book, it does have primer chapters... and the code through the rest of the book is actually pretty darn useful.

If you want a book that focuses on using AS3 for more traditional-style rendering, I recall stumbling upon a tutorial that walks you through just that (and you end up with a vertical shoot-em-up, along the lines of the old "1942" arcade game). The tutorial is on BrightHub somewhere, and I don't recall the title. Try a quick Googling for "brighthub actionscript game tutorial", or something along those lines.
